docs: add Eigen to Linux install deps

Linux "basic dependencies" omitted libeigen3-dev even though
ifcgeom requires Eigen3 (find_package Eigen3 REQUIRED) and the
cmake snippet already passes -DEIGEN_DIR=/usr/include/eigen3.
macOS Homebrew line already installs eigen.

Closes #6903
