build-deps/occt: use CMAKE_INSTALL_PREFIX for consistency with build-all

Switched from custom `INSTALL_DIR` to generic `CMAKE_INSTALL_PREFIX` in build-all in f3d1c62f5, mirroring the change on Windows too.
